Wagyū are a Japanese breed of cattle boasting legendary flavour, it's literal translation, "Wa" meaning Japanese, and "gyū" meaning beef. These animals are revered for their intra-muscular fat (marbling), which provides a unique experience in tenderness and taste. A fateful trip to Argentina many years ago left an impression on our family, laying the groundwork as to how we felt we could finish these animals, and turn a great culinary experience legendary...
